15 grams fresh Yeast
1 kilogram Pastry flour (type 550)
500 grams Spelt flour (type 630)
1 Tbsp salt
75 milliliters Canola oil
Pastry flour (for the work surface)
1 egg
Sesame seeds (to sprinkle)

Preparation steps

Dissolve yeast in 2-3 tablespoons cold water. Add both flours with salt, oil and about 650 ml (approximately 2 3/4 cups) of cold water in a large bowl and add the yeast water. Knead with a food processor to a smooth dough. If necessary add more water or flour. Cover the bowl and let dough rest in the fridge overnight (at least 10 hours).

Divide dough on a work surface dusted with flour into 25 equal pieces. Shape pieces into rolls and place on a baking sheet lined with parchment paper. Let rest for about 30 minutes.

Preheat oven to 220°C (approximately 425°F). Beat the egg and brush the rolls with it. Sprinkle with sesame seeds and place in oven on middle rack for about 15 minutes. Cool on a wire rack and serve.
