- 3 Tbsps olive oil
- 3 cups Chicken breasts (diced)
- salt
- peppers
- ⅓ cup Sesame seeds
- 1 Pineapple (peeled, cored and diced)
- 2 Oranges (peeled and segmented)
- ½ fresh Coconut (shaved or prepared coconut shavings)
- 1 pomegranate
- 2 Limes (juiced)
- dried Chili flakes (optional)

This salad work well threading the ingredients onto soaked wooden skewers for a barbecue.
Preparation steps
1.
Heat the oil in a pan and fry the chicken quickly until golden and cooked through. Season, coat in the sesame seeds and set aside.
2.
Combine the pineapple and oranges in a serving bowl with the coconut. Halve the pomegranate and hold it cut side down over the bowl. Bash with a wooden spoon to release the seeds - be careful, the juice does spurt out. Stir in the lime juice, a pinch of salt and the chilli if using.
3.
Sit the chicken pieces on top and serve.
