3 cups Chicken breasts (diced)

0.333 cup Sesame seeds
1 Pineapple (peeled, cored and diced)
2 Oranges (peeled and segmented)
½ fresh Coconut (shaved or prepared coconut shavings)
1 pomegranate
2 Limes (juiced)
dried Chili flakes (optional)

Preparation steps

Heat the oil in a pan and fry the chicken quickly until golden and cooked through. Season, coat in the sesame seeds and set aside.

Combine the pineapple and oranges in a serving bowl with the coconut. Halve the pomegranate and hold it cut side down over the bowl. Bash with a wooden spoon to release the seeds - be careful, the juice does spurt out. Stir in the lime juice, a pinch of salt and the chilli if using.
3.
Sit the chicken pieces on top and serve.
