100 grams Porcini mushroom
100 grams Oyster mushrooms
1 small onion
1 garlic clove
60 grams streaky Bacon
50 grams green Olives (pitted)
1 Tbsp Caper
50 grams sundried Tomatoes (packed in oil)
4 Cod (each about 160 g, with skin)
salt
1 Tbsp lemon juice
baby Chervil (or parsley, for garnish)

Preparation steps

Wipe the porcini and oyster mushrooms with a damp paper towel and cut into small pieces. Peel and finely chop the onion and garlic. Cut the bacon into small cubes. Drain the olives and capers. Slice the sundried tomatoes into strips.

Heat 3 tablespoons of the sundried tomato oil in a skillet. Add the onion, garlic and bacon, and cook until the onion is translucent and the bacon is golden. Add the mushrooms, olives, capers and sundried tomatoes, and cook for 3-4 minutes. Remove from heat and keep warm.

Rinse the cod and pat dry. Season with the salt to taste and drizzle with the lemon juice. In the same pan, heat 2 tablespoons of the sundried tomato oil. Add the cod and sear until cooked through, about 4 minutes per side. Serve on plates with the mushroom mixture. Garnish with chervil.
