Preheat oven to 160°C (approximately 320°F.)
Roll out puff pastry and place on round plate. Cover puff pastry and pierce with fork. Thinly slice cod fillet and sprinkle with lemon juice. Mix sour cream with egg yolks, oil, lemon zest, salt, pepper and nutmeg.

Spread cod slices evenly across puff pastry and cover with sour cream mixture. Peel and slice eggs then arrange slices in ring around puff pastry edge. Place shrimp in between egg slices. Season quiche with salt and pepper and slide into hot oven. Bake for 25-30 minutes until golden brown then serve immediately.
