- ¼ cup olive oil
- 1 ⅓ cups Monkfish (cut into bite-sized pieces)
- 8 King prawn (ready-to-cook)
- 2 cloves garlic cloves (finely chopped)
- 1 cup Tomatoes (peeled and chopped)
- 1 Tbsp paprika
- 1 Sepia ink
- 4 cups fish stock
- 8 cups short Vermicelli
- 1 ⅔ cups Calamari (baby squid)

Preparation steps
1.
Heat the oil in a large pan and fry the fish. Remove from the pan and fry the prawns. Set aside and fry the garlic and tomatoes. Add the paprika, sepia, stock and vermicelli. Cook on a high heat for around 5-6 minutes.

Reduce the heat and simmer for another 5 minutes. Add the squid, fish and the prawns and simmer for another 5 minutes until the pasta has absorbed most of the liquid. Season with salt and ground black pepper.
3.
Leave the fideua to steep on the stove for 2-3 minutes until all the liquid has been absorbed and then serve.
