For the shrimp
200 grams shrimp
1 onion
2 Tbsps Mayonnaise
1 Tbsp Crème fraiche
lemon juice
salt
cayenne pepper
½ bunch Arugula
½ bunch Dill (chopped)
2 organic lemons
For the waffles
150 grams softened butter
4 eggs
1 pinch salt
250 grams Pastry flour
250 milliliters milk
1 tsp finely chopped Fresh herbs
salt
freshly ground peppers
Nutmeg
vegetable oil (to grease the waffle iron)

Preparation steps

1.

For the waffles: Cream the butter with the eggs and salt, sprinkle in the flour, continue to stir, fold in the milk and garden herbs and let the dough rise for about 30 minutes. Season with salt, pepper and nutmeg.

Heat up the waffle iron to medium level, brush lightly with oil and, one after the other, bake the waffles until golden.

For the shrimp: Stir the mayonnaise with the creme fraiche until smooth. Peel the onion, cut into strips and stir with the shrimp into the cream mixture. Add dill and season with lemon juice, salt and cayenne pepper.

4.

Rinse the arugala and pat dry.

5.

Rinse the lemon, pat dry and cut into thin slices.

6.

Start with a waffle, sprinkle with arugula and spread some of the shrimp on top. Then add a lemon slice and place a waffle on top.
