Preparation steps

1.

Peel the shallots. Heat the clarified butter in a pan. Sauté the shallots, stirring constantly. Add 1/4 l (approximately 1/4 quart) of water to the pan, and cover. Cook for 15 minutes. 

2.

Uncover, and cook until the liquid evaporates over high heat.
