800 grams cooked potatoes (from the day before)
1 bunch scallions
150 grams Bacon (small cubes)
1 Tbsp butter
salt

Preparation steps

1.

Peel the potatoes and cut into slices.

Rinse and peel the scallions. Dice the white sections and cut the green sections into rings.

Fry the bacon in some butter in a large skillet until crispy. Remove and set aside.

Next, add the potatoes to the pan and sauté in the bacon fat, stirring occasionally. Add the scallions and sauté for a few minutes. Season with salt and pepper and stir in the bacon.

4.

Serve garnished with the green scallion rings.
