½ ripe Mango
½ Red chili pepper

3 Tbsps olive oil
1 generous pinch Curry powder
1 Tbsp honey
2 Tbsps pickled green peppercorns
3 Tbsps Orange juice
500 grams blanched Tomatoes (canned)

1 generous pinch ground Cumin
4 rough Sausage

Preparation steps

Peel mango, loosen fruit from core and dice fruit. Rinse chile pepper, cut in half lengthwise, remove seeds and ribs and chop. Peel garlic. Heat olive oil in a small pan and squeeze garlic through a press into pan. Add chile pepper and sauté briefly. Add curry, honey and pickled green peppercorns, mix and then add orange juice and tomato.

Let simmer for about 10 minutes, crush slightly with a fork, add mango, mix and season with salt, pepper and cumin. Remove the pan from the heat and let rest. Meanwhile, place sausages on a grill pan or baking sheet and cook under a preheated oven broiler, watching carefully, for about 10 minutes on all sides. Spread tomato and mango sauce on four bowls and then place sausages on top. If desired, serve with fresh bread.
