- 4 shallots
- 2 garlic cloves
- 5 Tomatoes
- 500 grams Italian sausage
- 2 Tbsps olive oil
- 2 thyme
- 200 milliliters dry white wine
- 500 grams Pappardelle noodles
- salt
- freshly ground peppers
- ½ tsp lemon zest

Preparation steps

For the sauce: Peel and finely dice the shallots and garlic. Blanch the tomatoes in boiling water, peel skin, remove seeds and dice small. Remove the sausage from the casings and mash with a fork. Heat the oil in a pot. Add the shallots and cook until translucent. Add the garlic and cook until fragrant. Add the sausage and thyme, and cook until browned. Stir in the wine and simmer for 10-15 minutes.

For the pappardelle: Cook the pasta in a pot of boiling salted water until al dente.

For serving: Season with sauce with salt, pepper and lemon zest to taste. Serve over the pappardelle.
