- 4 Tbsps sugar
- ½ tsp chili peppers
- 50 milliliters Vegetable broth
- 3 Tbsps White vinegar
- 3 Tbsps Ketchup

Preparation steps

Rinse the tomatoes, remove the stalks, blanch, peel, quarter, core and dice finely. Peel the shallot and chop finely.
For the sauce, heat a pan and let the sugar caramelize in it. Add the diced tomatoes with shallots and diced chile pepper, and cook for 2-3 minutes. Pour the vegetable broth and white wine vinegar, and simmer over medium heat for about 5 minutes. Puree the sauce finely, add the ketchup, and season with salt and pepper.
Heat the clarified butter in a pan and fry the curry sausages on all sides until brown. Remove the sausages and cut into slices. Serve the sliced sausages with the sauce in small bowls. Serve sprinkled with ground curry.
