800 grams starchy potatoes

1 Tbsp lemon juice
1 pinch sugar
1 pinch Ground cinnamon
2 onions
80 grams Smoked bacon
400 grams Blood sausage
1 Tbsp clarified butter
2 Tbsps butter
150 milliliters milk

Preparation steps

1.

Peel, rinse and boil potatoes in salted water for about 30 minutes.

Meanwhile, peel, quarter and core apples. Dice quarters and drizzle with lemon juice, sugar, cinnamon and 3 tablespoons of water. Simmer apples for about 10 minutes over medium heat, until soft.

Peel onions, cut in half and julienne. Cut bacon into strips. Slice sausage.

Heat butter in a pan and cook onions and bacon until golden brown, 3-4 minutes. Push onions and bacon to the side and add sausage to the pan. Cook until golden brown on each side, about 2 minutes.

5.

Drain and evaporate cooked potatoes. Mash potatoes with butter and milk, then stir until smooth. Add apples and season with salt, pepper and nutmeg.

6.

Plate apples and potatoes and serve with sausage and onions.
