Red Cabbage Mashed Potatoes with Sausage and Apple Slices
Ingredients
- For the red cabbage
- 1 Red cabbage (about 1 kg)
- 1 Apple
- 40 grams clarified butter
- 1 Tbsp sugar
- 1 onion
- 4 cloves
- 1 bay leaf
- ½ Cinnamon stick
- 0.13 l dry Red wine
- 0.13 l Red wine vinegar
- 1 Tbsp lingonberry
- salt
- Additional ingredients
- 500 grams festkochende potatoes
- 2 firm Apple
- 2 Tbsps lemon juice
- 4 Sausage
- 2 Tbsps vegetable oil
- 250 milliliters lukewarm milk
- 40 grams butter
- freshly ground peppers
- ground Nutmeg
- 30 grams butter
Preparation steps
For the red cabbage: Trim the cabbage, halve, remove the core and thinly slice. Rinse apple, peel, quarter and remove the core. Cut apple into very small cubes.
Melt the butter in a saucepan, add apple pieces, sprinkle with sugar and let caramelize slightly. Add the cabbage and cook. Deglaze with vinegar and wine. Pierce the onion with the cloves and add to pan along with the cinnamon stick and bay leaf. Cover and simmer until soft over low heat, 40-50 minutes.
Meanwhile, peel, rinse and cook the potatoes in boiling salted water for 25-30 minutes. Peel 2 remaining apples, remove the cores with an apple corer and cut apples into thin slices. Immediately sprinkle with lemon juice.
Brown sausages on all sides in a hot pan with oil. Drain the cooked potatoes and press through a potato ricer. Mix with the milk and 40 grams (approximately 3 tablespoons) butter. Add the red cabbage, mix and season the mashed potatoes with salt, pepper and nutmeg to taste. Cook the apples with remaining butter in another pan until golden on both sides. Slice the sausages and serve with the mashed potatoes and apple rings on a warm plate.
