- 4 Salmon (each 160 grams)
- 2 Tbsps vegetable oil
- Tomato relish
- 500 grams Tomatoes
- 2 onions
- 1 Tbsp sugar
- 3 garlic cloves
- 1 chili pepper
- 4 Tbsps vegetable oil
- ⅛ l Beef broth
- 2 Tbsps Vinegar
- salt
- freshly ground peppers

Preparation steps

Blanch tomatoes in hot water, rinse with cold water, peel, cut in half, remove seeds and finely chop. Peel onions and garlic and finely chop. Finely chop the herbs. Rinse chile pepper, halve, remove seeds and finely chop. Sauté onions, chile pepper, sugar and garlic in hot oil. Add tomatoes and tomato relish and sauté briefly. Then add broth and vinegar and simmer until the sauce has thickened. Season with salt and pepper. Allow to cool.

Rinse salmon fillets, pat dry and season with salt and pepper. Drizzle with olive oil. Then place on the preheated grill or a grill pan and cook for 3-4 minutes on each side.

Serve with grilled corn on the cob, if desired.
