2 garlic cloves (pressed through a garlic press)
125 milliliters Orange juice
2 Tbsps olive oil

Preparation steps

1.

Debone salmon with tweezers, season with 1 teaspoon of sugar, 1 tablespoon of sea salt and lime zest. Drizzle with lime juice, wrap in foil and refrigerate overnight.

Blanch tomatoes, peel, halve crosswise and remove seeds. Place tomatoes in an ovenproof dish. Combine remaining ingredients to make a sauce, pour over tomatoes and bake in a preheated oven at 180°C (approximately 350°F) for 15-20 minutes..

Cut salmon fillet into finger-sized strips, make incisions on the sides. Heat oil in a pan and cook salmon on both sides until done. 

4.

Place baked tomatoes on warmed plates, top with salmon and garnish with halved lime wedges. Accompany by fresh baguette. Serve.
