- 4 fresh Salmon fillet (skin and bones removed)
- 3 Tbsps light Mayonnaise
- 2 tsps lemon juice (or lime juice)
- 1 clove garlic cloves (peeled and pressed)
- ½ tsp sweet paprika
- salt (to taste)
- freshly ground Black pepper (to taste)
- Tomato Salsa
- 25 ripe Grape tomato (rinsed and halved)
- 1 small sweet onion (peeled and diced)
- 3 cloves garlic cloves (pressed)
- ½ cup chopped, fresh cilantro
- 2 Tbsps lemon juice (or lime juice)
- 2 Tbsps extra virgin olive oil
- salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps
1.
Preheat the oven to 375° F. Lightly spray a shallow baking pan with cooking spray. Arrange the salmon in the pan.

In a small bowl, combine the mayonnaise, lemon or lime juice, garlic and paprika. Lightly spread on the mixture on each fillet. Season to taste with salt and pepper.

Bake for 15 to 18 minutes, or until the fish flakes easily when tested with a fork.

Meanwhile, in a medium non-reactive bowl, combine the tomatoes, onion, garlic, and cilantro. In a small bowl, gently whisk the lemon or lime juice, olive oil, salt and pepper. Drizzle dressing over the salsa and toss to coat.
5.
Divide the salmon among individual serving plates and top with tomato salsa. Serve.
