4 Tomatoes
4 Tbsps olive oil
1 Tbsp balsamic vinegar
40 grams black Olives
2 Tbsps small Caper
2 Salmon steak (each about 180 grams)
1 Tbsp clarified butter
salt
freshly ground pepper

Preparation steps

Blanch tomatoes in hot water for a few seconds, rinse in cold water and peel. Halve and remove seeds, cut into cubes. Heat 3 tablespoons of olive oil in a pan and saute diced tomatoes for about 3 minutes. Season with salt, pepper and balsamic vinegar. Add chopped olives and capers, mix well.

Season fish fillets with salt and pepper. Heat remaining oil in a pan and cook fish for about 2-3 minutes per side.

Arrange salmon steaks with tomato sauce on plates. If desired, serve with herb rice and lemon slices.
