4 flache Plastic bowls oder Metallschalen, 1 Small bowl, 2 große Pots, 1 Sieve, 1 Kitchen towel, 1 Paper towel, 1 Small knife, 1 Egg slicer, 1 Brush, 1 Large knife, 1 Kitchen twine, 1 Cutting board, 1 Wooden spoon, 1 Slotted spoon, 1 Tablespoon, 1 Measuring cups, 1 Teaspoon, 1 Egg piercer
Preparation steps

Preheat the oven to 180°C (375°F).

Clean the salmon filets. Drizzle lime juce over the top and season with salt and pepper. Melt the butter in a casserole dish. Place the salmon filets in the butter and cover with tin foil, so that the fish does not dry out. Cook in the oven for about 20 minutes. Wash the lime and cut into thin slices. Rinse the dill in cold water and shake dry.

For the hollandaise sauce melt the butter in a saucepan and clarify the butter by removing any foam. Let cool slightly. Fill a large saucepan 3/4 full with water and heat. Place a bowl over the top. Mix the egg yolks with 1 tablespoon of water. Beat the egg yolks over the bain marie. Slowly add the butter, stirring continuously, until creamy. Season to taste with salt, pepper and lemon juice.

Pour the hollandaise sauce over the fish, garnish with fresh dill and slices of lime.
