14 ozs fresh Salmon fillet (skinned and boned)
7 ozs Sea salt
1 ⅔ cups olive oil
1 bay leaf
2 allspice
2 Red onions (finely diced)
1 garlic clove (finely diced)
1 organic lemon (juiced, zest grated)
12 leaves young Spinach
1 fresh Baguette (cut into 12 slices)
1 oz Dill (chopped, some set aside to garnish)
3 Tbsps black Caviar
1 lemon (cut into wedges)

Preparation steps

1.
Place the fish in an aluminium tray and sprinkle with lots of salt so that it is well covered. Marinate for 2 hours.
2.
Remove the fish from the salt, rinse and place in a new aluminium tray. Pour the oil over the fish, season with ground black pepper and add the spices. Marinate over night.

Remove the fish from the oil, rise and dice.
4.
Mix together the fish, onions, garlic and 1 tbsp lemon juice and season with ground black pepper.
5.
Place a spinach leaf on each of the baguette slices. Mix together the dill and the tartar and place 1-2 tbsp of tartar on each baguette slice. Garnish with lemon zest and caviar and arrange on plate. Serve with dill and the lemon wedges.
