Salmon Blini Bites

Whisk the eggs and milk in a mixing bowl. Add the flour, baking powder and salt and mix well. Leave to stand for 10 minutes.
Heat the oil in a frying pan and cook spoonfuls of the batter for 1 minute on each side, until golden brown. Set aside to cool.
Roll up the salmon slices. Spread each pancake with a little creme fraiche and pepper and place the salmon rolls on top. Garnish with lemon zest and dill.
