Ingredients

For the blini
200 grams Pastry flour
50 grams Buckwheat flour
7 grams Dry yeast
l milk
1 egg
1 pinch salt
3 Tbsps clarified butter (for frying)
For the salmon
150 grams Smoked salmon (thinly sliced)
lemon juice
salt
freshly ground peppers
120 grams Sour cream
Dill (for garnish)

Preparation steps

1.

 For the blini, combine the flour dry yeast. Add the milk, egg and salt. Knead quickly. Cover and let rise for about 1 hour in a warm place.

Preheat the oven to 80°C (approximately 175°F).

Heat a little butter in a pan. Using a tablespoon, cook the blini until golden on both sides. Keep warm in the oven.

4.

For the salmon, finely dice the fish. Season with lemon juice, salt and pepper. Place on the finished blinis. Top with a dollop of sour cream and garnish with dill. Serve immediately.
