Ingredients

For the batter
200 grams Pastry flour
50 grams Buckwheat flour
7 grams Dry yeast
l milk
1 egg
1 pinch salt
3 Tbsps clarified butter (for sautéing)
For topping
1 organic lemon
200 grams Sour cream
freshly ground peppers
150 grams thinly sliced Smoked salmon
Dill (for garnish)

Preparation steps

For the batter: In a bowl, mix together the all-purpose flour, buckwheat flour and the yeast. Stir in the milk, egg and the salt until smooth. Cover and let stand in a warm place until well risen, about 1 hour.

Preheat the oven to 80°C (approximately 175°F).

Heat a little butter in a pan. Drop the batter by tablespoonfuls into the oil and cook until golden brown on both sides. You'll have about 12 blini. Keep warm in the oven.

For the topping: Rinse the lemon, wipe dry, quarter and cut into slices. Top each blini with some sour cream, a grinding of pepper, smoked salmon and the lemon. Garnish with dill and serve on a plate.
