- 3 Tbsps Oil
- 1 red Bell pepper (deseeded and cut into strips)
- 9 ozs green String bean
- 2 Tbsps butter
- 4 fresh Salmon fillet (5 oz each; trimmed)
- 1 Tbsp Caper
- Tarragon (to serve)

Preparation steps
1.
Heat the oil in a frying pan (skillet) and gently cook the pepper strips until softened.
2.
Meanwhile, cook the beans in a pan of boiling salted water for 5 minutes. Drain well and set aside.
3.
Remove the cooked peppers from the pan, wipe it clean and add the butter. when it is bubbling, add the salmon and cook for 3-4 minutes on each side or until cooked through.
4.
Put the green beans onto serving plates and place the salmon on top. Garnish with the pepper strips and scatter over the capers and tarragon leaves.
