Preparation steps

1.

For the salad: Rinse and trim the green beans. Cook in boiling salted water for 8 to 10 minutes. Drain, rinse with cold water, and drain again. Cut into pieces if desired.

Rinse the tomatoes, remove the core, and cut into wedges. Peel the onions, cut in half, and hten cut into julienne or  rings. Rinse and dry the lettuce and tear into pieces. Drain the tuna well and separate into flakes. Peel the eggs and cut in half.

Arrange all of the prepared salad ingredients on a platter or salad plates.

For the dressing: Whisk the vinegar with lemon juice, mustard, and oil. Season with sugar, salt, and pepper. Drizzle the dressing over the salad.

To serve, garnish with olives and capers.
