4 Tbsps olive oil

Preparation steps

1.

Rinse and trim the endive. Remove 12 beautiful leaves and set aside, then julienne the rest.

2.

Cut the pecorino cheese into cubes.

3.

Rinse the radicchio, separate the leaves, and tear into smaller pieces if necessary.

4.

Rinse and quarter the pears. Remove the core and thinly slice.

5.

Rinse and dry the watercress.

6.

Mix all the prepared ingredients with the walnuts and watercress.

7.

Mix the vinegar and oil. Season to taste with salt, pepper, and sugar. Drizle over the salad, and serve.
