For the lobster
1 cooked lobster
1 handful mixed Lettuce (as desired, such as watercress, arugula)
For the vinaigrette
1 shallot
3 Tbsps white balsamic vinegar
4 Tbsps olive oil
1 tsp honey
1 Tbsp lemon juice
salt
freshly ground pepper
For the chips
1 Beet
1 potato
1 Tbsp Pastry flour
Frying oil

Preparation steps

For the chips, rinse the potatoes and red beet thoroughly. Peel the beet and the potatoes, and cut into thin slices. Coat the beet and potato slices with pastry flour and fry in hot oil.

For the lobster, prepare the lobster and cut into bite-size pieces.

Rinse and trim the mixed lettuce.

For the vinaigrette, peel the shallot and chop finely, mix with vinegar, oil, honey and lemon juice and season with salt and pepper.

Place the mixed lettuce and lobster on a plate and drizzle with the vinaigrette. Serve garnished with beetroot and potato chips.
