Salad with Beef and Citrus Fruit
With a paring knife, following the curve of the fruit, remove the zest and white pith of the grapefruit, orange and pomelo. Working over a bowl, cut in between the membranes to release the fruit. Rinse the lettuce, spin dry and pluck the leaves. Thinly slice the meat and cut into wide strips. For the vinaigrette mix the honey with the oil and lime juice and season with salt and pepper. Roast the nuts in a dry skillet, remove, let cool and chop coarsely.
Mix the lettuce with the citrus and meat, arrange on plates and serve sprinkle with nuts and drizzled with the vinaigrette.
