- 3 ¼ cups baby Spinach
- 2 cups Mandarin orange (segments)
- 6 slices thick-cut Bacon
- ½ small Red onion (peeled and sliced)
- 1 clove garlic cloves (peeled and finely minced or pressed)
- 1 cup Cooked chicken (cut into bite-size pieces)
- 3 Tbsps Red wine vinegar
- 2 Tbsps Orange juice
- 1 Tbsp honey
- freshly ground Black pepper
Preparation steps

Transfer the spinach and orange chunks into a salad bowl and set aside.

Cook bacon in a skillet over medium heat. Cook until crisp about 10 to 12 minutes, then transfer to a plate lined with a paper towel. Pat bacon dry and crumble over salad.

Pour out all but 2 tablespoons of bacon fat. Add the onions and cook until softened, about 1 to 2 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add chicken and warm through.

Add red wine vinegar, orange juice and honey. Scrape up all the bacon bits that are stuck to the pan and add ground black pepper. Do not overheat, just warm.
5.
Pour the dressing over the spinach and quickly toss to evenly distribute the dressing.
6.
Divide among plates and serve.
