- 3 Blood orange (peeled, pith removed and segmented)
- 2 Tbsps Rice wine vinegar
- ¾ cup Walnut (roughly chopped)
- thyme
- salt
- freshly ground Black pepper

Preparation steps
1.
Toss together the beetroot, sliced oranges, rice wine vinegar, and seasoning in a mixing bowl. Cover and chill for 15 minutes.
2.
Remove from the fridge after chilling and stir through the walnuts and croutons.
3.
Adjust the seasoning to taste and serve with a garnish of torn thyme on plates.
