Preparation steps

Rinse pears and cut into slices. Drizzle with lemon juice. Caramelize sugar in a large skillet until golden brown. Add pear slices with the rosemary sprigs and peppercorns. Cook the pear slices briefly, turning in hot caramel, being careful that the caramel is not too dark. Remove the pan from the heat.

Place the pear slices and the rosemary on plates. Add orange juice to the pan and mix well. Serve the pears with vanilla ice cream and drizzle with the caramel sauce.
