150 milliliters dry white wine
200 grams Roquefort cheese
1 tsp cornstarch
80 milliliters Vegetable broth
200 milliliters Whipped cream
salt
1 splash Almond liqueur

Preparation steps

Toast the walnuts in a dry pan until fragrant. Remove from the heat, let cool, then coarsely chop.

Peel and finely dice the shallot and garlic. Heat the oil in a pan, and sauté both. Deglaze the pan with the wine. Crumble the blue cheese, mix into the pan. Mix in the cornstarch, broth, and cream and stir to combine. Simmer the sauce for 5 minutes until thickened, stirring constantly. Season to taste with salt, pepper, and the liqueur. If necessary, add some broth to the sauce. Mix in the walnuts, stir to combine, and serve.
