Preparation steps

Coarsely chop the walnuts. Cut the roquefort into small cubes. Add the roquefort to a bowl with the lemon juice and mash finely with a fork. Add the crème fraîche and the cream, and puree completely. If necessary, thin the mixture with a little water. Add the vinegar, and season to taste with salt, pepper, and cayenne pepper. Sprinkle with the walnuts and chives, and serve.
