- 500 grams Romanesco broccoli

- 1 scallion
- 100 grams Sour cream
- 100 grams Yogurt (0.1% fat)
- 1 Lime (juice)
- 1 tsp Maple syrup
- freshly ground peppers

Preparation steps

Rinse the broccoli and romanesco florets. Bring a large pot of salted water to a boil and add the romanesco. Simmer for 2-3 minutes, then add the broccoli and cook for about 5 minutes more. Drain and rinse.

Rinse and chop the spring onion. Beat the sour cream and the yogurt with the lime juice, maple syrup, 1 pinch of salt, and 2-3 tablespoons of water. Drizzle the dressing over the vegetables and serve garnished with freshly ground pepper.
