200 grams Cranberry (fresh or frozen)
3 Romaine lettuce
400 grams turkey breasts (in strips)
2 Tbsps vegetable oil
2 Tbsps brown sugar
50 milliliters Cranberry juice
salt
freshly ground pepper
1 garlic clove (finely chopped)
1 Tbsp Mayonnaise
1 tsp sweet Mustard
50 milliliters Cranberry juice
4 Tbsps olive oil
Crouton
4 slices Whole Wheat Toast
50 grams Herb butter
Parmesan (for garnish)

Preparation steps

1.

For the dressing, mix garlic, mayonnaise, mustard, cranberry juice and olive oil. Season with salt and pepper.

For the croutons, toast bread, cut into bite-size pieces and cook in hot butter until crispy on all sides. Drain and place on paper towels.

Rinse cranberries. Rinse, trim and cut Romaine into bite-size pieces. Cook turkey in hot oil on both sides and sprinkle with sugar, salt and pepper. Deglaze with cranberry juice. Add cranberries and cook until hot. Remove from heat and cool.

4.

Distribute salad on plates. Top with turkey and cranberry mixture. Drizzle on dressing and serve sprinkled with croutons and Parmesan.
