- For the salad
- 2 Tbsps olive oil
- 2 white Bread (cubed)
- 4 Romaine lettuce (washed and leaves separated)
- ½ cup Parmesan (shaved)
- Chives (to garnish)
- For the dressing
- ¼ cup olive oil
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 tsp white wine vinegar
- 2 canned Anchovy fillet (drained and chopped)
- salt

Preparation steps
1.
Heat the olive oil in a large frying pan over a medium-high heat and fry the cubes of bread, tossing regularly to coat in the oil.
2.
Fry until golden brown, then season and drain on kitchen paper.
3.
Arrange the lettuce on serving plates and top with croutons and shavings of Parmesan.
4.
Whisk together all the ingredients for the dressing, then fold in the anchovies and drizzle over the salad. Garnish with chives and serve immediately.
