- 3 ½ ozs cellophane noodle
- 8 sheets Rice paper (22 cm in diameter)
- 1 stick Celery (cut into thin batons)
- 2 carrots (cut into thin batons)
- 1 yellow pepper (cut into thin batons)
- 1 handful Thai basil (leaves picked)
- light soy sauce
- 16 stalks Garlic chive

Preparation steps
1.
Put the noodles in a bowl and pour over boiling water. Leave for 10 minutes until soft, then drain in a sieve, refresh in cold water and cut into lengths of around 5 cm using kitchen scissors.

Fill a flat dish, slightly larger than the sheets of rice paper, with water. Spread out a tea towel to one side and put a second cloth ready. Submerge the sheets in the water, one at a time, and leave to soften for around 1 minute. Then carefully lay out on the towel and pat dry with the second cloth.
3.
Place some of the vegetables, noodles and basil in the centre of each softened sheet of rice paper. Drizzle over a little soy sauce. Top each with 2 chive stalks so that the protrude at one end. Fold in the ends of the rice paper and roll up.
4.
Serve with salad and dips if desired.
