- 4 sheets Rice paper
- 1 Tbsp white wine vinegar
- 3 Tbsps olive oil
- salt
- freshly ground Black pepper
- 1 small Lettuce
- 2 carrots (cut into thin strips)
- 1 red Bell pepper (cut into strips)
- 1 handful Bean sprout

Preparation steps
1.
Soften the rice paper between moist tea towels.
2.
Mix the vinegar, oil, salt and pepper to taste.
3.
Put 1-2 lettuce leaves on each sheet of rice paper, top with a few strips of carrot and pepper and some beansprouts. Sprinkle with the dressing.
4.
Turn in the ends and roll up carefully. Cut each roll in half diagonally. Serve with soy sauce separately.
