Preheat the oven to 220°C (approximately 425°F). Peel potatoes and cut into slices or wedges. Pat potato pieces dry with paper towels or a cloth.
Spread oil on a baking sheet, spread potatoes on it and season with salt and pepper. Bake in a preheated oven for about 20 minutes. Occasionally turn over until potatoes are browned. Serve while hot.
