1 chicken (about 1.4 kg 8-10 chicken wings)

2 preserved lemons (from a jar)
70 grams green Olives
1 onion
2 garlic cloves
4 Tbsps olive oil
200 milliliters chicken stock
125 milliliters dry white wine
6 sprigs thyme
3 Tbsps honey

Preparation steps

Preheat oven to 180°C (approximately 350°F).

Rinse chicken, pat dry and divide into 8 pieces. Season with salt and pepper. Cut preserved lemons into quarters and drain olives. Peel and cut onion and garlic into quarters. In a roasting pan, fry chicken pieces in hot olive oil until browned on all sides. Add preserved lemons, onion, garlic and olives. Add wine and stock. Rinse thyme, pat dry and place on the chicken. Transfer pan to oven and roast, stirring occasionally and turning chicken pieces, about 30 minutes. During the last 10 minutes of roasting time, brush chicken pieces with honey. Roast until browned. If necessary, broil chicken, watching carefully, until browned. Season to taste with salt and pepper before serving.
