6 cloves garlic cloves (halved)
3 large Oranges (sliced)
2 cups Orange juice
1 Tbsp kosher salt
1 tsp cayenne pepper
1 Tbsp dried oregano

Preparation steps

1.
Cut 1/2" slits (12) all over pork roast and insert halved garlic cloves into slits.

In large bowl combine slices from 2 oranges, orange juice, salt, pepper and oregano. Place roast in marinade, cover and refrigerate overnight, turning roast over occasionally.

Preheat oven to 300 F. Place pork in roasting pan. Remove orange slices from marinade and discard. Pour reserved marinade liquid over roast. Cover roast with foil. Cook for 2-3 hours, (basting frequently) or until a meat thermometer registers 160 F.
4.
Remove roast from oven and roasting pan and let stand 5-10 minutes before slicing. While roast is standing add remaining orange slices to roasting pan and return to oven. Carve roast and arrange pork slices along with orange slices in roasting pan. Serve immediately.
