4 unwaxed Oranges (three finely sliced, one juiced)
28 ozs young wild boar saddle (with skin and fat)
2 Tbsps Oil
1 ⅔ cups Game stock
cup cream
salt
peppers

Preparation steps

1.
Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and line a roasting tin with the orange slices.
2.
Season the meat with salt and ground black pepper and fry in hot oil on all sides. Place in the roasting tin on top of the oranges and add a little stock. Braise for around 1 hour, basting occasionally with the orange juice and the remaining stock.
3.
Remove the meat from the oven, wrap in aluminium foil and leave to rest for ten minutes. Arrange the orange slices on a serving platter.
4.
Place the stock from the roasting tin into a pot and add the cream. Bring to the boil and then simmer for a few minutes and season with salt and ground black pepper.
5.
Arrange the meat on the oranges, garnish with two slices and serve with the gravy.
