- 71 ozs boneless Pork legs
- Oil
- salt
- peppers
- 4 cloves garlic cloves (sliced)
- 28 ozs onions (chopped)
- 2 unwaxed Mandarin orange (sliced)
- 1 cup white wine vinegar
- 1 Tbsp sugar
- 2 bay leaves
- To garnish
- 1 unwaxed Mandarin orange (cut into wedges)
- 1 cup toasted slivered almonds

Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5.
2.
Score the pork rind very well with a sharp knife. Brush the rind with a little oil and sprinkle with salt and pepper, rubbing well into the rind.

Place the joint in a roasting tin and cook for 30 minutes, then reduce the oven temperature to 180°C (160° fan) 350°F gas 4 and cook for a further 40 minutes.

Slice the oranges. Heat the oil in a pan and gently cook the oranges, onions, vinegar, sugar and bay leaves for about 10 minutes until softened.

Spoon the mixture around the pork and cook for a further 30 minutes, until the meat is cooked and the skin is crisp.

Tip the onion mixture onto a warm serving plate.

Slice the meat and season with a little pepper. Place the slices on top of the sauce, arranging the orange slices between the pork slices
8.
Garnish with orange wedges and scatter over the almonds.
