Preparation steps

Preheat the oven to 200 ° C top and bottom heat Preheat.

Season meat with salt and pepper all around. Score rind in a diamond pattern. Heat oil in a roasting pan and brown meat on all sides. Add broth to the pan and roast meat in preheated oven at 200°C (approximately 400°F) for about 1 hour.

Peel onions and cut lengthwise into wedges. Rinse rosemary, shake dry and pluck off leaves. After 1 hour of roasting, add onions and rosemary to the pan and reduce oven temperature to 180°C (approximately 350°F), roast for about 1 hour more. Add cider to the pan as needed and brush pork rind with honey.

30 minutes before the end of cooking, rinse and quarter apples, core and cut into wedges, add to the pan. At the end of roasting, increase oven temperature to broiler setting and roast until apples and meat have crispy crust, watching carefully.

Turn off oven and let meat rest in the oven for about 10-15 minutes. Remove meat from the oven and slice. Arrange meat slices with apples on plates and serve.
