50 grams clarified butter
100 grams onions
2 Tbsps Curry powder
1 tsp thyme
l Beef broth (from a jar)
600 grams tart Apple
3 Tbsps Apple butter

Preparation steps

1.

Rinse pork and pat dry. Heat oil in a roasting pan and sear pork on all sides. Peel onion, cut into eighths and add to the roasting pan. Add spices. Deglaze roasting pan with broth and simmer over medium heat for 1 1/2 hours.

Rinse apple, remove seeds with an apple corer and add to the roasting pan 20 minutes before the end of cooking time. Stir apples into the sauce and season with salt and pepper. To serve cut pork into slices and serve with apples and some sauce on plates and garnish with fresh thyme.
