Preheat the oven to 180°C (approximately 350°F). Slice the rind of the pork and rub with salt and pepper. Saute in hot oil on all sides briefly and then put in a roasting pan. Cook for about 2 hours in the preheated oven. Peel the onions and cut lengthwise into slices.

Rinse the thyme and rosemary and shake dry. After about 30 minutes, lay the onions on the roasting meat and let cook for 10 minutes. Rinse the apples and cut into quarters. Sprinkle the rosemary and thyme on the onions, pour the cider and stir in the rosehip jam.

Let stew together. If necessary, pour on some more water. Remove the finished roast and the apples carefully, arrange on a plate and season with the sauce, salt and pepper.
