- 2 Tbsps vegetable oil
- 2 Tbsps Corn starch
- 1 ¼ cups dairy-free milk
- 1 Tbsp Dijon mustard
- ¼ tsp salt
- ½ cup mozzarella dairy-free cheese
- 3 large eggs (separated)
- 2 large egg whites
- ¼ tsp cream of tartar

1 Cutting board, 1 Small knife, 1 Pot mit Deckel, 1 Wooden spoon, 1 Garlic press, 1 Teaspoon, 1 Tablespoon, 1 Measuring cups
Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Grease 6-8 ovenproof cups.

Cook the broccoli in a pan of boiling salted water for 1 minute. Drain well and set aside.
3.
Heat the oil in a pan and whisk in the cornflour. Cook, whisking, for 1 minute. Add the milk, mustard and salt and cook, whisking constantly for 1-2 minutes until thickened.
4.
Remove from the heat and whisk in the cheese and 3 egg yolks. Put into a large bowl.
5.
Whisk 5 egg whites in a bowl until soft peaks form. Add the cream of tartar and continue whisking until stiff peaks form.
6.
Gently fold 1/2 the egg whites into the milk mixture until incorporated. Fold in the remaining egg whites and broccoli until no white streaks remain.
7.
Spoon into the cups and place on a baking tray. Bake for about 20 minutes until golden and puffy. Serve immediately.
