4 ¼ cups carrots (sliced)
2 ½ Tbsps butter
cup double cream
1 medium egg
2 egg yolks
½ tsp ground ginger
salt

Preparation steps

1.
Cook carrots in water for 20-25 minutes until very tender. When cooked drain and put in a blender or food processor.

Meanwhile pour the cream into a pan, add salt and pepper and gently heat for 3–4 minutes. Remove from the heat and add the ground ginger. Mix together and set aside.

Preheat the oven to 180°C | 350F | gas 4.

Add the cream, whole egg and 2 egg yolks to the carrots in the blender and whiz for 1 minute.
5.
Butter 4 ramekins, pour the mixture into the ramekins. Place the ramekins in a large roasting dish
6.
Make a bain-marie using the roasting dish by half filling with boiling water. Cook the souffles in the oven for 20 minutes until slightly risen and golden brown.
7.
Serve with a mixed salad.
