2 Tbsps butter (plus extra for greasing)
2 Tbsps plain flour
½ cup milk
¼ cup Parmesan (grated)
¾ cup Goat cheese
3 eggs (separated)
2 baby Spinach (finely chopped)

Preparation steps

Preheat the oven to 200ºC (180º fan) 400ºF, gas mark 6. Grease four individual ramekins with a little butter.

Melt the butter in a small pan and stir in the flour. Cook for two minutes, stirring all the time, then gradually whisk in the milk. Cook for about five minutes then add the parmesan and goats cheese and season with salt and pepper. Whisk the egg whites into the sauce then remove the pan from the heat and stir in the spinach.
3.
Whisk the egg whites in a clean bowl until they hold soft peaks. Fold the egg whites into the cheese mixture then spoon into the greased ramekins. Place on a baking tray and bake in the oven for 10-12 minutes or until the souffles are well risen and golden brown.
