Rice Paper Rolls with Shrimp

- 16 Rice paper
- 1 Cucumber
- 8 fresh shrimp
- salt
- 150 grams green Asparagus
- ½ bunch Chives
- 8 Lettuce
- 1 red chili pepper
- sesame oil
- 1 Tbsp Rice vinegar
- 1 tsp Fish sauce
Preparation steps
Place rice leaves between 2 damp kitchen towels to soak.
Rinse chile, remove seeds and finely chop.
Peel cucumber, core and cut into sticks. Trim asparagus and blanch in boiling salted water for 10-15 minutes. Drain well. Rinse lettuce leaves and spin dry. Heat 1 tablespoon sesame oil in a pan and sauté prawns briefly. Season with salt. Cut chives into medium sized pieces.
Mix together 2 tablespoons sesame oil, rice vinegar, chile and fish sauce to make a sauce.
Lay two rice sheets on top of each other, put 1 lettuce leaf on top and smooth to make it somewhat flat. Place shrimp, cucumber sticks, chives and asparagus in the center of the rice papers, drizzle with a small amount of sauce and roll up tightly. Stick together at the edges with a little water. To serve, cut in half and place on plates with dipping sauce as desired.
