1 fresh ginger about 5 cm (2 inch) piece
juice of lemons
2 Tbsps Agave syrup
salt
½ tsp Red pepper flakes
4 Tbsps vegetable oil
2 Tbsps Walnut oil
1 bunch chopped Chives
300 grams Rice noodles
lemons (for garnish)

Preparation steps

1.

Peel the ginger and finely grate. Mix the ginger and lemon juice with agave syrup, salt and pepper flakes and mix in the oils. Mix chives with the dressing.

2.

Pour boiling salted water over the rice noodles and let sit, 3 min. Strain and rinse with cold water, then drain and mix with the dressing.

3.

Serve in bowls and garnish with lemon slices.
